Well. In the last part of the movie before the book closes up. Aurora's dress turns pink. Then the book closes. I feel this piece of detail confirms the final color of her dress. Although this is just my speculation.

Tbh since they chose to use the baby blue color of Cinderellas dress (actually silver but the light blue is an optical illusion in certain scenes because of the lighting) I’m happy they went with pink. I agree with you about the baker falling in love with Anastasia again after the events of Cinderella 3 just like Cinderella falling in love with the Prince all over again after lady tremaine reset the time line with the fairy godmothers magic wand due to the timeline being reset just like Cinderella and prince charming falling in love all over again the same thing happened between Anastasia and the baker
